Strawberry Chocolate Cookie Parfait

  • 8 to 10 large strawberries
  • 5 pieces Oreo cookies (separate and remove cream filling)
  • 200 ml whipping cream
  • 40 g caster sugar
  • 8 pieces mini chocolate wafer (cut into bite size)

  1. In a large bowl, beat the cold whipping cream until foamy.
  2. Add in sugar and continue to whisk until firm peaks formed.
  3. Keep it chill in the fridge until ready to use.
  4. Place the Oreo cookies into a Ziploc bag and seal it. Using a rolling pin or something similar, gently roll and crush the cookies into small pieces. Set aside.
  5. Cut a few pieces of strawberries into cross section slices.
  6. According to the type of glassware you are using, divide the slices equally.
  7. Cut the rest of the strawberries into small cubes. Set aside.
  8. To assemble:
  9. Transfer whipped cream into a piping big fitted with a large round tip nozzle. If you do not have a piping bag, simply use a large spoon.
  10. Pipe a dollop of whipped cream into the bottom of the glass and place a spoonful of cookie bits on top.
  11. Line the side of the glass with strawberry slices.
  12. Pipe another layer of whipped cream and in chopped strawberries and mini chocolate wafer.
  13. Top with the final layer of whipped cream and decorate with a piece of Oreo cookie, pocky sticks and wafer stick. Feel free to use other toppings of your choice.
  14. Serve cold.
