Crispy Potato Patty with Blueberry Salsa

  • Potato Patties -
  • 3 large potatoes – peeled and chopped into cubes
  • 2 tsp vinegar
  • ½ tsp salt and pepper
  • 1 tsp garlic powder
  • 1 to 2 tbsp corn starch
  • 1 egg – beaten
  • 1 stalk spring onion -chopped
  • Blueberry Salsa -
  • ½ cup fresh blueberries – chopped
  • ½ cup fresh blueberries
  • Juice from half lemon
  • 1 handful chopped coriander
  • 1 green chilli – diced finely
  • ¼ yellow/red onion – diced finely
  • ½ red pepper – dice finely
  • Salt and pepper
  1. Blueberry Salsa:
  2. Combine all ingredients together in a large bowl and mix well. Cover and chill in the refrigerator until ready to serve.
  3. Potato Patty:
  4. Peel and grate the potatoes.
  5. Place in a large bowl and cover with water and add in vinegar.
  6. Soak for about 20 mins. The vinegar will help to crisp up the potatoes during cooking.
  7. Drain and pat dry with paper towels.
  8. Transfer back into the dry large bowl and add in salt, pepper, garlic powder, chopped spring onion and corn starch. Mix well.
  9. In a large pan or skillet, heat enough oil so it covers about 2 inches from the bottom of the pan.
  10. Scoop a spoonful of potatoes and cook the patties over medium heat for about 2 minutes per side or until golden brown.
  11. Serve with generous dollops of blueberry salsa.
