Lemon Meringue Cupcake

Serves: 12 cupcakes
  • ½ cup (64 g) cake flour
  • 1 tsp baking powder
  • Pinch of salt
  • 3 large eggs (approx. 60 g each) – yolk and white separated
  • 65 g caster sugar – for egg yolks
  • 3 tbsp (42 g) unsalted butter – melted in microwave
  • 1 tbsp vegetable oil
  • 1 tbsp water
  • Zest from 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract (I used vanilla bean paste)
  • 2 tbsp (28 g) sugar – for egg whites
  • ¼ tsp cream of tartar – for egg whites
  • Meringue frosting:
  • 3 egg whites
  • ¼ tsp cream of tartar
  • ½ cup caster sugar
  • ½ tsp lemon juice
  • Pinch of salt
  1. Preheat oven to 180°C/350°F.
  2. Sift the flour, baking powder and salt together.
  3. Add in oil and water to the melted butter and stir well.
  4. Separate the egg whites and yolk in two large bowls.
  5. Add sugar to the yolks and whisk till pale and light.
  6. Add in butter mixture, lemon zest, lemon juice and vanilla extract and mix well.
  7. Next, add the sifted flour into the batter and fold until just disappear. Set aside.
  8. Using an electric hand mixer, beat the egg whites with cream of tartar until frothy and add in 2 tbsp sugar gradually. Whisk until soft peaks.
  9. Scoop a dollop of the beaten egg whites into the batter and fold in quickly but gently.
  10. Repeat with the rest in 2 more batches.
  11. Tap the bowl gently on the counter to remove excess air.
  12. Line a 12-cup muffin tray with cupcake liners.
  13. Pour the batter into each liner about ¾ full.
  14. Bake in a preheated oven for 15 – 20 mins, until a skewer inserted comes out clean.
  15. Remove from oven and immediately drop the muffin tray on the counter from a 6-inch height, about 3 times. This will prevent the cake from sinking.
  16. Allow to cool completely on a wire rack before piping the meringue.
  17. To make meringue frosting:
  18. Find a saucepan or pot that allows the bowl for the egg white to sit on. Bring a few inches of water in the pot to boil and set it on simmering heat.
  19. Add cream of tartar, salt and sugar to the egg whites and set it on the pot. Using an electric whisk or hand mixer, beat till frothy, about 1 min.
  20. Remove from heat and in lemon juice. Continue to whisk until shiny, stiff peaks, about 3 mins.
  21. Place frosting into a piping bag fitted with a star tip (I’m using 12mm). You could fill it in 2 batches.
  22. Pipe the frosting on top of each cupcake.
  23. Use a kitchen torch and lightly torch the surface of the frosting.
  24. Enjoy.
  25. *I like to leave the cupcakes to chill in the fridge for 30 mins before consuming.
