DIY Chinese Fortune Cookies

Serves: 14 cookies
  • 2 egg whites
  • ½ cup (70 g) all-purpose / plain flour
  • ½ cup (100 g) sugar
  • Pinch of salt
  • ½ tsp vanilla extract
  • ¼ lemon extract / almond extract (optional)
  • 1 tbsp (15 ml) vegetable oil
  1. Preheat oven to 325°F/160°C.
  2. In a medium bowl, beat the egg whites and sugar together with a whisk until dissolved.
  3. Add in salt, vanilla extract and lemon extract (if using) and stir well.
  4. Sift in flour and whisk until just combined.
  5. Lastly, pour in oil and mix well.
  6. Line a baking tray with non-stick baking paper. You could use a silpat as well.
  7. Scoop the batter with a teaspoon and drop it onto the baking tray.
  8. Use the back of the spoon to smooth out the batter into a 4-inch round circle. It should not be spread too thinly as the cookie will crack. You should do 2 – 3 cookies at a time.
  9. Bake for 8 – 10 mins, until the edges are golden brown. If you like your fortune cookie darker, bake until most of the cookie is golden brown.
  10. Remove the tray from the oven and use an offset spatula to separate the cookie from the baking sheet. While the cookie is still warm, put a strip of message in the center of the cookie and fold it into half. Bend the cookie over the edge of a cup to form the shape of a fortune cookie. Place in a muffin tray to hold its shape while cooling. It will harden when cooled.
  11. Store cookies in air-tight container at room temperature for up to a week.
