Garlic Butter Smashed Sweet Potatoes

  • 3 medium sweet potatoes
  • 3 tbsp (45 g) unsalted butter - melted
  • 4 cloves garlic - minced
  • Salt and black pepper
  • Parmesan cheese – grated
  1. Wash the skin of the sweet potatoes well.
  2. Trim off both ends and cut into 1-inch thick pieces.
  3. Bring a large pot of water to boil and add in 1 tbsp salt.
  4. Add in sweet potatoes, cover and cook 20 mins, or until fork tender. Do not overcook or they’ll fall apart.
  5. Meanwhile, prepare your garlic butter mixture by mixing the minced garlic and butter together.
  6. Drain the sweet potatoes.
  7. Lightly grease a baking tray with some oil and arrange the boiled sweet potatoes in a single layer.
  8. Use a fork and gently smash and flatten each piece lightly.
  9. Pour a tbsp. of the garlic butter mixture onto each piece and sprinkle with some salt and pepper.
  10. Set your oven to broil or grill function and bake them for 15 mins or until golden. Sprinkle generous amount of parmesan cheese all over the sweet potatoes and bake for another 5 mins, until the cheese is melted.
  11. Serve warm.
