It’s been raining quite a bit these days. There’s nothing better to perk up my mood by having some chocolate! To be honest, I’ve been struggling to come up with a perfect name for this recipe. I have to do justice to this insanely luscious and decadent chocolate dessert. Think of it as a lovechild between chocolate mousse and molten lava cake. In the end, I went with Crazy Fudgy Dark Chocolate Mini Cake.

Even though I’ve never visited Levain Bakery in New York, there are enough videos online to prove they are arguably the BEST Chocolate Chip Cookie in Manhattan. Search for “Levain Cookie” in YouTube or the internet and you’ll find tons of online tutorials on how to make these thick and chunky cookies. They are crisp on the outside and moist in the centre. They are SERIOUSLY delicious!

Éclair is one of those desserts that seem to send “oohs” and “aahs” across the table. It took me almost a day to finish writing this lengthy post. While it may seem daunting, it’s actually quite easy and satisfying to make your own éclairs. Since DoubleTree by Hilton released their official recipe couple months ago, I’ve been urged by family members and friends to replicate these highly popular cookies (more than 30 million consumed every year*) that are even baked in space. Yes, you heard it right. Who says astronauts can’t bake?

Truth be told, when I first came across this Chocolate Layer Cake with Caramel Ganache in Rose’s Heavenly Cakes by cake goddess Rose Levy Beranbaum, I skimmed past the recipe and did not even bother to attempt it. Perhaps it was the lack of an illustration of the cake or maybe the daunting 3-page instructions, whatever the case was, I’m glad I finally rolled up my sleeves and did it. This Double Chocolate Pavlova with Mascarpone Cream is made with one of my favorite girlfriends in mind. She is a huge fan of chocolate, meringue and also gluten-intolerant. Action speaks louder than words, I actually made this for her birthday (few weeks back) and hand delivered it right to her door. This "Be My Valentine Dark Chocolate Cookies" is in fact an Oreo cookie recipe. To be honest, I think they tasted better than the real Oreo cookies (sorry Nabisco, no offense). I was pleasantly surprised how easy it was to make them too. The sweetness level of vanilla filling contrasted perfectly with the mildl flavored chocolate cookie so it is absolutely not necessary to reduce any sugar...

The name of the recipe post “Dark Chocolate Roulade with Roasted Strawberry Mousse” might sound all fancy and stuff but do not be intimated. It is really an easy-to make flour-less sponge chocolate roll filled with (lots of) light wondrous whipped cream and roasted strawberries. I decided to use a flour-less recipe for the cake as I prefer it to be lighter side and also for anyone who is looking for a gluten-free dessert recipe. Since Christmas is around the corner, this would make a wonderful dessert and centerpiece at lunch or dinner. A homemade cake just brings special joy to the holidays. I can’t believe this post never made it out sooner. I think this is one of those recipes I reckon is so common I didn’t think anyone would be interested. Until now. Besides my Easy Banana Chocolate Sheet Cake, these Best Ever Chocolate Fudge Brownies is the other most requested pot-luck dessert from hosts of dinner parties I’ve attended/will be attending soon to bring along. Even for those parties I was not invited to. (kidding, it was for my mom-in-law’s gatherings and I have no intention to gate crash any of them, hee hee).

Even though they are called Banana Bread Cookies (mainly because of the shape), the texture are super fluffy, moist and almost cake-like. Thanks to the use of the super ripe banana, they smelled and tasted 99% like banana bread. I can’t help but to open the cookie jar every now and then to get a whiff of that addictive aroma.
