These days, I’m huge on preparing one-dish meals. Not only are they quick to make, cleaning up is a breeze too. Even though they are relatively simple, the meals are delicious enough to impress your guests!
This Easy Stir-fry Minced Pork recipe is a Vietnamese classic with all the umami flavor I love but with minimal effort. Traditionally, this dish is served with light and fluffy steamed Jasmine rice or rice noodles. And there’s no reason to mess with that formula. However, who can say no to a runny-centered fried egg? I know I can’t.
Ingredients:
250 g minced pork
1 stalk lemongrass – bruised and chopped into finely
2 cloves garlic – minced
½ large onion – chopped
1 bird eye chilli – cut finely
Sauce –
1 ½ tsp brown sugar
1 ½ tsp fish sauce
½ tsp soy sauce
½ tsp dark soy sauce
Dash of white pepper
¼ cup water
1 tsp corn starch mix with 1 tsp water
Garnish –
Chopped coriander / spring onion
Red cut chili
Serves 2 – 3

My favorite trio of sauces.
In a large pan, add in 2 tbsp cooking oil and sauté the onion, lemongrass, garlic and chili over medium hit for 2 mins. Be careful not to brown the mixture too much.
Push the ingredients to one side of the pan and add in another tbsp cooking oil.
Turn up heat to medium high, add in minced pork and break it into small pieces with your spatula.
Let it sit on the pan for 30 seconds to brown slightly before mixing.
Add in pepper, sugar, fish sauce, soy sauce and dark soy sauce. Continue to mix until even.
Pour in the water and cook for another minute over medium heat. There should be quite a bit of liquid in the pan and that’s okay.
Taste and adjust with more seasoning if required.
Add in cornstarch solution and mix well. The sauce should thicken and coat the minced pork.
Garnish and serve warm over rice.
