Watermelon is really one of my all-time favorite fruit. It’s juicy, sweet and so easy to eat. Tiger bought back a whole watermelon few days ago. After devouring ¾ of it, we are left with ¼ and it was then I decided to turn it into something else.
To be honest, my original idea was to make a watermelon sorbet but alas, laziness got the better of me. I took the shortcut and made this frozen watermelon slushie instead. So simple to make, no frills, no gigantic mess to clean up. After which, it’s just me and myself kicking back, chilling with this large glass of cool and refreshing icy goodness. Life is good.
Ingredients:
4 cups diced and seeded watermelon – frozen
Juice of 1 lime
3 tbsp honey
1/4 cup (60 ml) sparkling water / ginger ale
Serves 2
Cut the watermelon into cubes and remove the seeds if any.
Put them in a container and freeze for 2 – 3 hours.
Add the frozen watermelon, lime juice, honey and ginger ale/sparkling water into a blender.
Blend until smooth and serve immediately.
