While my baby girl (technically she’s turning 14 soon, but still my baby) and I were doing grocery shopping one day, she grabbed a box of Cinnamon Toast Crunch cereal and enthusiastically suggested we should make something out of it. Well, that was random, I thought. I couldn’t help but to smile a little inside. Perhaps the cooking spirit is finally rubbing off on her?
One of my greatest wish is for her to develop the same passion in cooking like me. That is yet to be known but one thing for sure, we had a great time browsing and shortlisting CTC recipes before settling on this Cinnamon Toast Crunch Bars. It is incredibly easy to make and serves as a great snack or treat for kids. Heck, yours truly couldn’t resist digging into a few pieces too.
Ingredients:
2 cups cinnamon toast crunch
1 cups rice krispies / corn flakes
2 tbsp (28 g) butter
10.5 oz (300 g) bag of small marshmallows (reserve 1 cup)
1/2 cup semi-sweet chocolate chips – melted
Makes one 8-inch round pan
Recipe source: Cookies and Cups (with slight modification)
The line up. I couldn’t get my hands on those tiny marshmallows so I cut up some big ones instead. 😀
In a large microwaveable safe bowl, add in butter and marshmallows and melt for 30 – 40 sec. Stir well.
Pour in both kinds of cereal and mix until even coated. Feel free to use your hands but make sure they are slightly greased as the mixture will be tacky.
Add in the reserved marshmallows and mix just to incorporate.
Spread onto a greased 8-inch dish / pan and press down firmly.
Drizzle melted chocolate sauce all over the top and refrigerate until firm.
Cut into squares and serve.
