Found some granny smith apples lying in my basket of oranges. What I can do with 3 of them? I’ve just finished giving the oven a good scrub down (I can’t remember the last time I did it, oops) and really not in the mood to make anything complicated, or rather, anything that involves in heavy cleaning up. Hmm…I know… apple crumble! What better way to reward myself than with a warm, delicious dessert with my favorite crunchy granola topping?
Ingredients:
3 granny smith apples (if you are using red, you could omit the white sugar)
2 tbsp granulated white sugar
2 tbsp brown sugar
1 tbsp (14 g) unsalted butter
1 tbsp all-purpose flour / plain flour
zest of 1 orange
zest and juice of 1/2 lemon
1 tsp cinnamon
pinch of salt
Crumble topping:
1/4 cup ( 21 g) granola or rolled oats
1/3 cup (43 g) all-purpose flour / plain flour
Pinch of baking powder
2 tbsp brown sugar
2 tbsp granulated white sugar
1/4 cup (57 g) unsalted butter – cut into small pieces
2 tbsp raw sugar
1/4 tsp vanilla extract

Preheat your oven to 210C / 410F.
Slice the apples thinly. I like to cut them into smaller size to absorb the flavors.
In a large skillet or pan, add the butter and both kinds of sugar, cook over medium low heat until it starts to bubble.
Add the apples, cinnamon, orange zest, lemon zest and juice, salt and cook the mixture for about 5 minutes. Stir in the flour into the apple mixture and remove from heat.
Meanwhile make the topping.
In a large bowl, stir together both kinds of sugar, granola, flour, baking powder and vanilla extract. Add the butter and use your fingers to rub in the ingredients until its evenly distributed among the dry mixture.
Place the apple filling into small ramekins and cover with topping. Sprinkle raw sugar all over the top.
Bake the crumble for about 30 minutes or until golden brown and bubbly on top.
