Flourless Cloud Bread

Since I saw this Cloud Bread making waves on the internet some time last year, I’ve been wanting to give this super easy 4-ingredient recipe a try. Now, traditionally, one of the crucial ingredients for bread making is flour, yet this recipe calls for none. The method resembles very much like making a soufflé yet less complicated so there is no really no messing up on this one (I hope). The only thing you'll want to take note is the whisking of the egg whites. When the instruction states beat egg whites until STIFF peaks, you must really beat them till STIFF peaks. The stiffer the better. That way, your cloud bread will hold their shapes well when you transfer them onto the baking tray...

Garlic Butter Smashed Sweet Potatoes

Sugary sweet potatoes are roasted to caramel perfection before being smothered in pungent garlic and saline parmesan cheese. A sensual combination of flavours. This dish is a dream for vegetarians and an absolute meat-free wonder. Sweet potatoes are high in vitamins, minerals and fibre. Which means that this dish is not just delicious but healthy as well. Parmesan cheese provides not only a salty tang to contrast the sweet potatoes, but also an extra edge of texture and flavour...

Kaya Jam

Mention kaya Jam in Southeast Asia and everyone will tell you how decadent and sinfully delicious it is. A popular breakfast spread on white bread or toast, it is a perfect way to enjoy this coconut custard jam. This nonya kaya recipe is verbally given to me by my Dad. It was only recently I discovered my Dad was in charge of making kaya for the families at the tender age of 10. The original recipe was 10 eggs : 1 kati sugar : 1 kati coconut milk (1 kati = 600 g). To be honest, I was kind of mortified with the measurements but I’m sure no one gives a damn about diabetes back then...

Crispy Sugar Toast

One of my favorite childhood breakfast memory is munching on slices of white sandwich bread slathered with soft butter and topped with crunchy sugar. The combination of this 3-ingredient breakfast/snack item is lethally yummy. Today’s crispy sugar toast is a brilliant and oh-so-delicious way to give few-days-old bread a new life! This recipe works well with bread kept in the fridge. Using dry bread is the success for crispy toast. You could use any type of sandwich bread you like or have on hand...

Crispy and Light Buttermilk Waffles

When I came across this Crispy and Light Buttermilk Waffles recipe by The Pioneer Woman, I immediately recognize it is going to be a keeper. No-knead Crusty Artisan Bread

When I saw the No-knead description, I was immediately sold. Believe it or not, I’m still trying overcome the fear of kneading dough for 10 mins with my bare hands. And no, I don’t have a bread machine. There is really not much arm muscle strength involved at all, maybe only when I was transporting my cast iron pot into the oven. The recipe requires the use of Dutch oven (I used a 5-quart size cast iron pot) but if you do not have it, fret not. You could use an oven safe dish with a lid, Pyrex baking dish covered tightly with aluminum foil, stainless steel pot with a lid...

Stuffed French Toast Roll Ups

Sliced bread is one of the most common breakfast items we have at home. But have you ever come across this problem where the last few slices are always left untouched? Balsamic Roasted Strawberries

I can’t believe I’ve missed making these Balsamic Roasted Strawberries most part of my life. Well, as they say - better late than never (who is they anyway??).Roasting strawberries not only releases their natural sweetness, it also intensifies the flavor and create that syrupy jammy goodness. The acidity in the balsamic vinegar lends a slight tang to create an overall sweet and tangy mouthfeel. These balsamic roasted strawberries are perfect to go with your ice-cream, in your yogurt, on top of your breakfast pancakes and even in cakes...

Easy Sandwich Bread

Anyhow, I’ve always been very very reluctant to jump into the bandwagon of bread-making. 1) I do not owe a bread-making machine. 2) Waiting 3 hours for the dough to rise is something I do not look forward to 3) What if after spending all that time and effort, the end result is not what I expected? If you realize, there is a very lacking category space for bread in my blog. Until now...

Cream Cheese filled Banana Cake

Couple of days ago, I was doing my weekend grocery run and guess what? There were a few big bags of ripe bananas sitting at the fruits weighing station, crying out “Buy Me”, with a price tag of $2 bucks! The offer was too irresistible and since we are huge banana fans, it would be fitting to add that bag into our grocery cart...
