Minced Pork Noodles Tossed with Scallion Oil

  • 200 g minced pork
  • 1 tbsp dried shrimp – soak in water for 15 mins and drained
  • 2 – 3 button mushroom – diced finely (optional)
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 2 tsp oyster sauce
  • 2 tsp soy sauce
  • 1 tsp dark soy sauce
  • 2 tsp sugar
  • Pinch of salt
  • Black pepper to taste
  • Scallion oil
  • Egg noodles
  1. Add 2 tbsp oil and minced meat into a skillet or non-stick pan.
  2. Cook until the water from the pork has evaporated.
  3. Add in ginger, garlic and dried shrimp and continue to stir fry at high heat until fragrant.
  4. Add in seasoning and ΒΌ cup of water.
  5. Simmer and give it a taste. Adjust with more seasoning if needed.
  6. Turn off heat and set aside.
  7. Cook the noodles accordingly to the instructions on the package. *I like to add 1 tsp of salt into the boiling water.
  8. Drain and toss lightly with some scallion oil.
  9. Place noodles on serving plate and top with minced pork and fried onions.
  10. Sprinkle with chopped green onions and drizzle with more scallion oil if desired.
  11. Toss well and enjoy.
