No-Bake Salted Caramel Granola Squares

Making and eating your own homemade granola is definitely more satisfying than store bought version. This easy peasy No-Bake Salted Caramel Granola Squares takes just about 20 mins to put together, no baking required.

The main casts of ingredients for a basic granola base are rolled oats, butter, peanut butter, honey and nuts. With that, you could add in your favorite ingredients, i.e. chocolate chips, dried fruits, flaxseed, etc and turn it into your very own customized granola recipe!

Since we are huge fans of salted caramel products, I decided to incorporate a little salty goodness into this recipe. For additional texture, I used up some plain ol’ cornflakes I have lying around in my pantry cupboard. If rice crispies are your thing, feel free to go ahead and use them too.

These highly addictive granola squares keep well in the fridge and since it is perpetually summer temperature where I am at, they thaw well at room temperature in a matter of minutes.

 

 

Ingredients:
1 ½ cup (90 g) rolled oats
1 cup (20 g) cornflakes / rice crispies
1/3 cup (80 g) natural crunchy peanut butter
1 cup (170 g) mini semi-sweet chocolate chips
¼ cup (60 g) unsalted butter
1/3 cup (75 g) honey
3 tbsp (45 g) brown sugar
½ tsp salt
½ tsp vanilla extract

In a pan, toast the rolled oats lightly until golden brown for about 5 mins.

 

Place rolled oats, half of the chocolate chips and corn flakes in a large bowl and mix well.

 

In a microwave or stove top, melt the butter, honey and sugar for 2 mins.

 

Add salt, peanut butter and vanilla to the caramel and set aside to cool for 5 mins.

 

Pour the salted caramel mixture and into the oats and mix well.

 

Transfer the granola mixture into a square 9 x 9 pan lined with non-stick baking paper.

 

Spread and press down the granola firmly with a spatula to make sure they do not fall apart when cut.

Sprinkle the rest of the chocolate chips evenly on top and press down with the spatula.

 

Refrigerate for an hour or until firm.

Remove the granola sheet from the tray and cut into desired squares or shapes.

 

Store in airtight container or if you are staying in a tropical country, keep them in the fridge and thaw them for few minutes at room temperature before consuming.
