Sugary sweet potatoes are roasted to caramel perfection before being smothered in pungent garlic and saline parmesan cheese. A sensual combination of flavours. This dish is a dream for vegetarians and an absolute meat-free wonder.
Sweet potatoes are high in vitamins, minerals and fibre. Which means that this dish is not just delicious but healthy as well. Parmesan cheese provides not only a salty tang to contrast the sweet potatoes, but also an extra edge of texture and flavour.
Whether you are eating this dish on its own, or having it as part of a meal along with meat and vegetables, this garlic scented sweet potato and cheese combination is surely not one to disappoint. Potatoes can also be used for this dish for a somewhat different flavour. Also, if you would like to add a deeper flavour to this cheesy garlic roasted sweet potatoes, the addition of some dried herbs such as thyme or Italian seasoning when roasting the sweet potatoes make an excellent choice.
3 medium sweet potatoes
3 tbsp (45 g) unsalted butter – melted
4 cloves garlic – minced
Salt and black pepper
Parmesan cheese – grated

Wash the skin of the sweet potatoes well.
Trim off both ends and cut into 1-inch thick pieces.
Bring a large pot of water to boil and add in 1 tbsp salt.
Add in sweet potatoes, cover and cook 20 mins, or until fork tender. Do not overcook or they’ll fall apart.
Meanwhile, prepare your garlic butter mixture by mixing the minced garlic and butter together.
Drain the sweet potatoes.
Lightly grease a baking tray with some oil and arrange the boiled sweet potatoes in a single layer.
Use a fork and gently smash and flatten each piece lightly.
Pour a tbsp. of the garlic butter mixture onto each piece and sprinkle with some salt and pepper.
Set your oven to broil or grill function and bake them for 15 mins or until golden. Sprinkle generous amount of parmesan cheese all over the sweet potatoes and bake for another 5 mins, until the cheese is melted.
