Strawberry Cheesecake Ice Cream

Between Tiger (aka the love of life) and I, can you guess who the bigger sweet tooth in the family is? Judging from the way I phrased the question, quick-witted readers would have gotten the answer right in a heartbeat. There’s no other way to describe except that I married an ice cream monster. A rather attractive one I must say. If the kitchen police were to raid our freezer, they would definitely find at least a tub (if not two) of frozen treat in there.
Strawberry Cheesecake Ice Cream is the latest flavor we are crazy over in our household. Combining my favorite cheesecake dessert with velvety vanilla ice cream is really our all-time favorite way to indulge. Calories aside, if you are looking for a smooth, rich and creamy ice cream recipe that would give Ben & Jerry’s a run for their money, this is it.

 

Ingredients:
1 cup (250 ml) fresh milk
3/4 cup (200 ml) whipping cream
3/4 cup (170 g) caster sugar
3 large egg yolks
4 oz (115 g) cream cheese – soften at room temperature
3/4 cup (200 ml) strawberry puree (about 12 large strawberries)
1 ½ tsp vanilla extract
1/2 cup strawberries – chopped finely
3 – 4 pieces graham crackers or digestive biscuits – crushed into fine bits

Makes 1 quart pint

The line up.

In a medium saucepan, add in milk and whipping cream. Bring to a scalding point on medium heat. Scalding point = warm but not boiling.

Using a stand mixer or hand whisk, beat the egg yolks, sugar and cream cheese till light and fluffy (approx. 5 mins).

Gradually pour in the milk mixture, whisking constantly to avoid the eggs from curdling.

Return all the mixture into the saucepan and heat the custard until it is thickened and coats the back of the spoon.

Let it cool while you blend the strawberries into puree.

Add the strawberry puree and vanilla extract to the custard and stir well.

Transfer into a large bowl, cover the custard with cling wrap so that it touches the surface of the custard. This will prevent a layer of “skin” from forming. Refrigerate for at least 6 hours or overnight before churning.

Churn according to your ice cream machine manufacturer’s instructions.

During the last 5 mins, add in your chopped strawberries and crushed crackers. Transfer the ice cream into containers and let it freeze to set.
