Deep Fried Black Eyed Peas

If you are a food network junkie like me, you would’ve come across the segment “The Best Thing I Ever Ate” where star spangled chefs would describe their favorite food (mostly American) they would indulge in their free time.
Even though they are aired over and over again for the last 5 years, this particular clip “The Best Thing I Ever Ate – “Deep Fried Black Eyed Peas” by Alton Brown never fails to capture my attention. And when Alton says it’s good, it’s good. This addictive snack is made famous by Relish Restaurant in Roswell, Atlanta (but last checked they have ceased operation).

I consulted Google and was thrilled to find I was not the only one who was dying to give this a try. These peas were exactly like how he had described – crispy on the outside, with creamy interior and they really “collapsed like a tin can” in my mouth.

 

Ingredients:
1 packet (250 g) dried black eyed peas
1 litre vegetable stock
1 onion – cut into quarters
Vegetable oil for frying

Seasoning:
Salt
Old Bay Seasoning
Garlic powder

McCormick old bay seasoning

You could find Old Bay Seasoning in your local major supermarkets (Singapore: Cold Storage, NTUC Finest, etc) under the herbs and spices section.

 

In a large bowl, soak the black eyed peas in tap water with 1 tablespoon of salt, at least 12 hours or preferably overnight. Drain the peas halfway through soaking time and add fresh water.

In a large pot, add in vegetable stock, onion and black eyed peas.

Bring to boil and cook for about 20 mins, until fork tender. Drain the peas and discard the onions. Lay out the peas on a baking tray and allow to cool and dry completely.

This step is important in order to achieve the light, crispy texture.

Before to serve, deep fry the peas in small batches for about 5 mins or until golden brown and drain on paper towels.

Toss with salt, garlic powder and Old Bay Seasoning while still hot. Taste and adjust seasoning accordingly.
