Creamy Corn Cheese

A big hello to my dear BNF fans! After a two-week hiatus, I’m happy to announce BNF is back in action!  I hope you have not forgotten about this bear. During this period, I really missed receiving all your fantastic comments and questions. Most of all, I missed working in my kitchen.
Now that I’m back, I want to continue to share all my favorite recipes and hopefully, lighten up your life and make it a little tastier and happier.

Creamy Corn Cheese is a super easy-to-make and no-frills side dish that is guaranteed to be a hit with corn lovers, children and just about anyone who wants a quick snack.

 

Ingredients:
1 can / packet of sweetcorn kernels (I’m using Del Monte brand)
1 tbsp (14 g) unsalted butter
½ cup mozzarella cheese (I’m using a mix of mozzarella and cheddar)
3 tbsp mayonnaise
1 tbsp sugar

I’m using a mix of mozzarella and cheddar but you could also just use mozzarella. 🙂

 

Drain excess water from corn.

In a large pan or skillet, melt the butter and cook the corn on medium heat for 2 mins.

Add in mayonnaise and sugar and cook for another 5 mins.

At this point, if you are not a fan of cheese, you could just eat the corn as it is. Transfer the corn into 2 heat-proof bowl and top each bowl with cheese.

Don’t go crazy with the cheese as it can get too thick and gooey.

Use the broiling mode and bake in the oven for 5 – 7 mins, until the cheese is bubbling and nicely melted.

Serve hot.
