Nutella Banana Upside down Cake

An upside down cake is simply a cake turned over and served upside down. The base is lined with a layer of fruit (usually pineapples) covered in butter and sugar. In case you have leftover Nutella lying around at home (like me) and in the mood for baking, try making this Nutella Banana Upside down Cake, which is an upgraded version of butter cake. If you are not a fan of banana, feel free to replace with mango, pineapple, apple or whatever works for you. 
 

Ingredients:

For the cake
1 cup (170 g) self raising flour
3 large eggs – room temperature
¾ cup (170 g) salted butter – room temperature
234 cup (170 g) caster sugar
1 ½ tsp vanilla extract
2 tbsp Nutella

For the base
1 ripe banana
2 tbsp (28 g) unsalted butter – melted in microwave
2 tbsp (12 g) caster sugar
½ cup Nutella – melted in microwave

Makes one 7-inch round cake

Cake:

In a large bowl, add in the butter and sugar and use a spatula to cream them together.

I’m not using any electric whisk in this recipe. Just my good ol’ wooden spoon. 🙂

 

Crack in the eggs and mix well. Don’t worry if the mixture is curdled as the flour will smoothen it in no time.

Add in the flour in 3 batches and fold into the mixture each time.

Once the flour is thoroughly combines, separate the batter into roughly two portions – scoop one portion into another bowl.

Portion for vanilla flavor.

 

Fold in the vanilla extract into one batter. Set aside.

Add in 2 tbsp of Nutella into the other batter and fold until combined. Set aside.

Base:

Banana and caramel sauce

Ingredients for base.

Line a 7-inch round cake tin with baking sheet.

Add the sugar to the melted butter and mix well.

Pour into the cake tin and swivel to cover the base.

I sprayed the cake tin with cooking spray followed by a sheet of baking paper.

Like so.

 

Slice the banana into round discs and line them onto the base.

Spread the melted Nutella on top of the bananas.

Pour the vanilla batter on top of the Nutella and smooth it out gently.

Lastly, pour in the Nutella batter and repeat the same step.

Put the cake batter into a preheated oven of 170°C / 340°F and bake for 30 – 35 mins or until the inserted skewer comes out clean.

Allow the cake to cool on a rack before unmolding it. Flip the cake over and peel off the baking sheet.

Don’t worry about the cracks as we will be flipping it over. 🙂
